The vineyard of Château Canon-la-Gaffelière covers an area of about twenty hectares in the heart of the AOC Saint-Emilion. Its terroir is made up of clayey-limestone and siliceous soils that retain heat, an exceptional feature for the cultivation of late varieties such as Cabernets.
This is all the more interesting when you consider that Château Canon-la-Gaffelière's grape varieties are almost half Cabernets, while the vineyards of the surrounding estates can have up to 70% Merlot.
The harvests are done by hand, in crates and then carefully sorted before vinification in thermo-regulated wooden vats and maturing on lees in oak barrels (between 80% and 100% new barrels) for 15 to 20 months.
Château Canon-la-Gaffelière 2017 is produced around a Merlot core (60%) to which are added Cabernet Franc (30%) and Cabernet Sauvignon (10%).
In the glass, Château Canon-la-Gaffelière 2017 shows a beautiful dark purple colour subtly pulling towards the ruby on the edge.
Its ample and rich nose distills a bouquet of ripe red and black fruits rolled up in tertiary notes of hot spices, light tobacco and earth.
On the palate, Château Canon-la-Gaffelière 2017 has a solid and straight tannic structure supporting dense, complex and incredibly fresh fruit aromas, which unfolds in the mouth and evolves, revealing a long, refined and earthy finish.
