Conceived in 1964, as a tribute to the founder of Maison Billecart-Salmon, the cuvée Nicolas François Billecart is made from a blend of Chardonnay Grands Crus and Pinot Noir (respectively from the Côte des Blancs and the Montagne de Reims). Thanks to a traditional vinification, the Champagne Billecart-Salmon "Cuvée Nicolas François" Brut 2002 has a great character, subtly combining power with lightness and elegance.

Dressed in a sparkling golden yellow colour with glittering golden reflections, the Champagne Billecart-Salmon "Cuvée Nicolas François" Brut 2002 distils a rich and subtle nose, with aromas of yellow fruits (peach, nectarine or mirabelle) that have reached maturity, enhanced by complex notes of citrus zest. On the palate, Champagne Billecart-Salmon "Cuvée Nicolas François" Brut 2002 reveals a balance perfectly mastered by its ripeness and the aromatic complexity of the summer fruits. This great aromatic freshness is spiced up with more noble notes of spruce and juniper. At the tasting, this Champagne Billecart-Salmon "Cuvée Nicolas François" Brut 2002 is exceptionally mineral and generous. Its great ripeness makes it a deeply complex wine.

It is a perfect accompaniment to white meat dishes such as roasted Bresse poultry or a chop of milk-fed veal.
