"Derrière chez Edouard", this surprising name has its origins in the geographical location of the plot, which is behind a house where the Edouard family supposedly lived. This plot, like all the other plots on the Hubert Lamy'sestate, is maintained with respect for biodiversity and the environment according to reasoned viticulture practices.

After manual harvesting and careful sorting, the grapes are crushed in order to capture all their essence. The juices are then vinified in barrels or half-muids and bottled after 12 to 18 months of ageing.

Hubert Lamy's Saint Aubin 1er Cru Derrière chez Edouard 2017 exhibits a magnificent limpid and golden colour.
On the nose, it distils a bouquet as elegant as it is charming, full of citrus fruit aromas, lemon zest, and floral notes intermingled with subtle mineral and chalky touches.
On the palate, the Saint Aubin 1er Cru Derrière chez Edouard Hubert Lamy 2017 offers the perfect balance between velvety richness and acidic freshness. After a moderately full-bodied attack, it expresses itself on a compact core of ripe and juicy fruits supported by a subtly dosed acidity. On the finish, mineral notes emerge behind the fruity aromas, offering a pure, fresh, delicate and remarkably long finish.

Although it has not yet reached its peak, the Saint Aubin 1er Cru Derrière chez Edouard Hubert Lamy 2017 is already ready for tasting. It will go wonderfully well with your dishes based on noble fish, seafood or a cheese platter (especially goat's cheese).
