Jean-Paul & Benoît Droin's Chablis 1er Cru Fourchaume 2018 is produced from a blend of 100% Chardonnay from a tiny 0.38 ha parcel of Kimmeridgian marls and deep brown clays. The average age of the vines is 40 years.
As for the whole vineyard, the Fourchaume plot is cultivated according to the principles of sustainable viticulture, with regular ploughing to maintain the soil.

After manual harvesting and rigorous sorting of the grapes, the juice is partly vinified in stainless steel vats. The other part is vinified in oak barrels. Malolactic fermentation follows and the wine is matured for 8 to 10 months depending on the specificities of the vintage.

Jean-Paul & Benoît Droin's Fourchaume 2018 is marked by the clay soils that gave birth to it. Characterized by an incredible richness and an average acidity, the Chablis 1er Cru Fourchaume Jean-Paul & Benoît Droin 2018 seems more like a Burgundy AOC than a Chablis.

In the glass, the Chablis 1er Cru Fourchaume Jean-Paul & Benoît Droin 2018 shows a beautiful pale yellow colour and reveals a youthful, spirited bouquet of white stone fruits and white spring flowers with a touch of nascent minerality.
On the palate, Chablis 1er Cru Fourchaume Jean-Paul & Benoît Droin 2018 is rich and opulent. The fruit aromas present on the nose are very well transcribed on the palate and coated with a subtle touch of iodine and sea salt.

Still in its prime youth, this 2018 vintage will gain in minerality throughout its evolution to finally find the typical style of the greatest Chablis wines.

The Chablis 1er Cru Fourchaume Jean-Paul & Benoît Droin 2018 will be perfect to accompany a noble fish dish, such as monkfish, or a white meat dish in sauce.
