Jean-Paul & Benoît Droin's Chablis Grand Cru Valmur 2018 is a 100% Chardonnay blend. The grapes used in its composition come from vines that are about fifteen years old and planted on a hillside of Kimmeridgian marls and white clay.

As for all the parcels of the estate, the Valmur parcel is maintained according to the principles of sustainable viticulture, with regular ploughing of the soil.

After manual harvesting, followed by vinification in stainless steel vats and oak barrels, the juices are aged between 8 and 10 months depending on the vintage. Malolactic fermentation is systematic. Fining and filtration are also carried out as required before bottling.

The Chablis Grand Cru Valmur Jean-Paul & Benoît Droin 2018 is characterized by a very mineral, massive and powerful profile.
In the glass, it has a beautiful pale yellow colour with golden highlights and distils a characteristic nose of yellow and white stone fruits such as juicy apricot and crisp, ripe white peach. After a few minutes of aeration, candied and floral notes emerge as well.
On the palate, the Chablis Grand Cru Valmur Jean-Paul & Benoît Droin 2018 offers a rich and ample attack followed by a round and fat mid-palate. The aromas of yellow and white fruits present on the nose are perfectly transcribed, enhanced by a well-dosed acidity and an incredible minerality.

The Chablis Grand Cru Valmur Jean-Paul & Benoît Droin 2018 is still in its prime youth. It is already ready for tasting but it will take at least ten years in the cellar to release all its substance.

Jean-Paul & Benoît Droin's Chablis Grand Cru Valmur 2018 will go perfectly with a seafood platter (especially lobster) but also with a platter of pressed cheeses.
