  • Did you know that contrary to some preconceived ideas, lamb will marry perfectly with a red wine?

    Contrary to a long-held principle that has fortunately fallen into disuse today, lamb meat, although white, will ideally go well with a red wine, and preferably a Bordeaux. Care should be taken to avoid all wines that are too concentrated and full of new wood. On the contrary, one will look for elegant tannins and a vivacity that one will find more easily in the soils of the Medoc or Graves.

    And for chocolate dessert ?
    If the white wine, and the red wine, can abound with aromas of chocolate, typical of mature wines, one also finds more opulent wines proposing this roasted aroma. The wines will have to compose with a certain sweetness in order to "fight" with cocoa. This is why we prefer a "mutated" wine, if possible on an old vintage, or a rosé champagne, acidulated and fruity.

  • Burgundy is a region of history, Burgundy is a region in the Central East of France, famous for its wine.
    Burgundy wine concentrates many appellations, some of which are world-famous. Romanée-Conti, Bonnes-Mares, in addition to the status of great Burgundy wine which is recognized to them, all these appellations grand cru are considered to be among the best French wines. The Bienvenues-Bâtard-Montrachet is also a great Burgundy wine.
    Burgundy wines have many flavours because of their diversity. Whites will reveal dry fruit and floral aromas; reds will reveal notes of undergrowth and red fruit, such as Romanée-conti, a great Burgundy wine.
    Several grape varieties are typical of Burgundy wine: Chardonnay and Aligoté for the white wine; Pinot Noir and Gamay for the red wine. Other grape varieties are also used, but to a lesser extent: Sauvignon, César, Pinot Beurot, Melon de Bourgogne, Sacy,... Burgundy wines are mainly single grape varieties.
    Like all the wines characteristic of the French vineyards, Burgundy wines draw their specificity from climatic and geological influences. Burgundy happens to be situated at the crossroads of different climates, which makes it possible to obtain the diversity of its wines. The soils are clayey and marly, with limestone.
    Burgundy wine has very ancient origins. When Gaul was occupied by the Romans, they developed viticulture. Christianity also influenced him, since the concentration of numerous abbeys and monasteries in this region of France allowed to increase the culture of wine.
    Burgundy has for specificity the division into "climates", parcels of land whose geology and climate vary according to its geographical area; this means that a certain diversity exists between Burgundy wines.
