The second wine of the famous Château Pavie (property of the Perse vineyards), the Esprit de Pavie is made from a blend of 70% Merlot, 25% Cabernet Franc and 5% Cabernet Sauvignon.
These three grape varieties have inherited the variety of terroirs from the hills of the Dordogne on which they have been harvested: the sandy-gravelly coastline, the clayey hillside and the clayey limestone plateau.
After grape harvests in green, the Esprit de Pavie is matured in wooden barrels of a wine from Château Pavie or Château Montbousquet for 15 months.
L' Esprit de Pavie 2011 is dressed in a beautiful intense carmine red colour with purplish highlights.
On the nose, the 2011 vintage of Esprit de Pavie reveals itself fresh and fruity, distilling layers of black fruit like blackcurrant with vanilla, woody and spicy notes.
On the palate, it offers a supple attack, expanding to reach a full mid-palate. The tannins are tight and delicately coated.
It is a balanced and complex wine, distilling aromas of black plums, blackcurrant, black tea and chocolate, coated with a subtle touch of bitter spices.
