Jean-Paul & Benoît Droin's Chablis 1er Cru Montmains 2018 is made from a 100% Chardonnay blend grown on the Montmains plot. This small piece of Kimmeridgian marl, facing South-West, covers an area of only 2.15ha. The vines have an average age of 45 years.
Out of concern for authenticity and environmental preservation, the estate favours sustainable viticulture by maintaining the soil through regular ploughing.

After manual harvesting, most of the wine is vinified in stainless steel vats with a part in barrels, before maturing for 8 to 10 months depending on the vintage.

The Chablis 1er Cru Montmains Jean-Paul & Benoît Droin 2018 has a superb pale yellow colour with golden reflections.
On the nose, it distils a charming bouquet of ripe and juicy white fruits (pear, apple), notes of almonds as well as a gourmet touch of butter.
On the palate, Chablis 1er Cru Montmains 2018 is richer than lively. The clay soil from which it comes from gives it an unparalleled roundness.
Rich and particularly deep, it offers a dense and fat body marked by aromas of white fruits as well as tropical notes. After a few minutes of aeration, brioche and toasted notes emerge to end on an elegant, refined finish marked by a hint of salty minerality.

The Chablis 1er Cru Montmains Jean-Paul & Benoît Droin 2018 will go wonderfully well with a noble fish dish or a pressed cheese platter.
